Bountiful Harvest




For not having a garden, I have procured an abundant harvest! I have a very generous cousin, uncle, neighbor and of course the store who had too much produce to handle!

It all started with bread and butter pickles. My cousin had cucumbers coming out of her ears and generously dropped off a few grocery bags full! I made 2 batches of fridge pickles, creamy cucumber salad, and 5 quarts of bread and butter pickles. I would have done more, but time would not allow!

The two large bags of beets arrived the same weekend as the cucumbers. Luckily my husband's aunt is an expert pickled beet "canner". Relieved to hear it, I gladly handed over the task to her so my husband can have his pickled beets all year! Thanks ma'am!

Next, tomatoes. My neighbor had a TON of extra tomatoes this year! Nothing in the world compares to canned tomatoes in a hot-dish!

Peaches. The rotary peaches. Although they were not the best peaches I have seen from the organization, I canned every single one that I could. I cannot wait to have a tasty peachy treat with supper some night this winter!

And lastly the pears. Every year I wait for those lugs to arrive at Larry's! I bought two this year! The kids absolutely LOVE canned pears! Peeling pears is one task I am not fond of, but the reward of a huge smile on 3 little faces when I take out a jar for supper is well worth the trouble!

For not having a garden this year, I sure did have a bountiful harvest! I am so thankful to the generous giving of our friends and family.
